The Mokha-Tokyo Exchange

Two rare coffees from opposite ends of coffee history. Yemen, whose Red Sea port of Mokha launched the world's coffee trade, meets Tokyo, home of Torahebi Coffee, which ages its green beans before roasting. This bundle brings both together:

  • Attarah Reserve - Yemeni Coffee Beans (Copperwood, 250 g): heirloom Ja'adi and Jufairi coffee grown at 1,950–2,250 m in Attarah, West Haraz, and naturally sun-dried. Notes of dried berries, dark chocolate, caramel and florals.
  • Torahebi Aged Blend - Pack of 2 (2 x 100 g): organic Colombian and Ethiopian coffees aged before roasting with Torahebi's proprietary process, for a fuller body and a velvety mouthfeel. Notes of strawberry, milk chocolate and cashew nut.

01Grind 18–20g of coffee fine, just before brewing.
02Tamp evenly into your portafilter.
03Pull 36–40g of espresso in 28–32 seconds with water at 92–96°C.
01Grind 15g of coffee medium-fine, just before brewing.
02Heat 250ml of filtered water to 92–96°C.
03Bloom the grounds with a little water, then pour the rest in slow circles.
01Grind 30g of coffee coarse.
02Add 500ml of water at 92–96°C and stir gently.
03Steep for 4 minutes, then press slowly and pour.

Attarah Reserve - Yemeni Coffee Beans (Copperwood, 250 g)
Grown by Mohammad Awadh Shibam on the terraces of Attarah in West Haraz at 1,950–2,250 m, these heirloom Ja'adi and Jufairi varieties are naturally sun-dried to preserve their sweetness and complexity. Expect a rich, full-bodied cup with dried berries, dark chocolate, caramel and floral aromas.

Torahebi Aged Blend - Pack of 2 (Torahebi, 2 x 100 g)
Organic coffees from Colombia and Ethiopia, aged before roasting with Torahebi Coffee's proprietary process. The ageing builds a fuller body and a smooth, velvety mouthfeel, with strawberry, milk chocolate and roasted cashew notes and a gentle, lingering finish.

Brewing: both coffees suit espresso, pour-over and French press. Torahebi's own guide: espresso 18–20 g in, 36–40 g out in 28–32 seconds; pour-over 15 g per 250 ml; French press 30 g per 500 ml; water at 92–96°C. Grind just before brewing.
