BRAZIL RANCHO GRANDE

Once the coffee cherry has been mechanically harvested it is then separated using density which separates the levels of ripeness.
The boia ( ripe cherry) and boian (slightly over ripe) are then chosen to be put into the static drying boxes.
The static boxes are 1 m deep boxes with capacity for 15000 litre volume of cherry which equates to 25-30 bags of green coffee. The boxes have a vented grill at the bottom to allow for air to be circulated from below up through the drying coffee. Initially cold air will be blown for 12 hours to help slow the fermentation process and then gradually the air temperature will be increased to allow drying for between 7 – 10 days. There are two thermometers at different depths to ensure a safe temperature always below 40c. They are referred to as static due to the coffee remaining still in the boxes and not being turned or rotated during drying. After it is dried the coffee is then left to rest for approximately 1- 2 weeks before being milled. This method has allowed the production of more fruity and prominent profiles from the usual profile we associate with Brazil natural coffee.

Grind + brew
01Grind 20g of Brazil Rancho Grande beans to a medium-fine consistency.
02Heat 320ml of water to 93°C.
03Pour enough water to saturate the grounds, bloom for 30 seconds, then continue pouring slowly and evenly in circles.
04Aim for a total brew time of 3 minutes.
01Coarsely grind 30g of these speciality beans.
02Add to your French press with 450ml of 96°C water.
03Stir gently, then steep for 4 minutes before slowly pressing the plunger.
01Finely grind 18g of coffee for your portafilter.
02Tamp evenly and extract 36ml of rich espresso.
03Target an extraction time of 25-30 seconds for a bold, flavourful shot.
01Coarsely grind 100g of coffee.
02Combine with 800ml of cold filtered water in a jar.
03Steep in the refrigerator for 12-18 hours, then strain. Serve over ice for a smooth, refreshing pick-me-up.

Overview

Brazil Rancho Grande Estate is produced in collaboration with Cocatrel Direct using experimental static-box drying and an added pre-anaerobic fermentation. The result is a rounder, sweeter Brazil natural with layers of creamy milk chocolate.

Origin, Farm & Processing

After mechanical harvesting, cherry is separated by density to isolate the ripe fruit before controlled fermentation and static-box drying slow the process and build sweetness.

Once dried, the coffee rests for roughly 1–2 weeks before milling — a method that lifts the fruit and sweetness beyond the profile usually associated with Brazil naturals.
