02Heat 300ml of water to 94°C.
03Bloom the grounds with 40ml water for 30 seconds, then pour steadily in circles.
04Aim for a total brew time of 3 minutes to capture those vibrant Yirgacheffe notes.
01Use 30g of Ethiopia Lalesa, ground coarsely, for a full-bodied cuppa.
02Add 450ml of 92°C water, ensuring all grounds are saturated.
03Steep for 4 minutes, allowing the anaerobic process to unfold.
04Slowly press the plunger and savour the moment.

02Extract 36ml of rich, concentrated espresso at 9 bars pressure.

02Combine with 500ml of cold filtered water in a jar.
