Ceremonial vs culinary grade matcha

Ceremonial grade comes from the youngest first-harvest leaves and is stone-ground into a fine, bright-green powder. It tastes naturally sweet, so it is smooth enough to whisk with just water. Culinary grade uses later-harvest leaves, so it is bolder and a little bitter. That is exactly what you want when the matcha has to stand up to milk, sugar or heat, which makes it the better pick for lattes, iced matcha, smoothies and baking. Matcha by region and brand

Where matcha is grown changes how it tastes. Uji, near Kyoto, is known for a sweet, rounded umami. Nishio and Kagoshima tend to be brighter and more vegetal. How to make a matcha latte

Sift about 2g of matcha so it does not clump. Add a splash of water at 70 to 80C (boiling water scorches it) and whisk hard in a W or M shape until it froths. Storing matcha in a hot climate

Heat, light and humidity are what spoil matcha. Keep the tin sealed and out of the light, refrigerate it once it is open, and let it come back to room temperature before you open it again so condensation does not get in. In the Gulf, a 30 to 40g tin you will finish in a few weeks beats buying in bulk.
