Most people get on best with a medium to medium-dark roast: chocolate, caramel, nutty, and forgiving while you dial in. Brazilian lots and blends are the dependable place to start. If you like a brighter, fruitier shot, the Ethiopian and Colombian espressos are worth growing into once the basics click.
Start at a 1:2 ratio: 18g in, about 36g out, in 25 to 30 seconds. Running too fast and tasting sour? Grind finer. Too slow and bitter? Grind coarser. In practice, fresh beans rested a week or two off roast and a decent grinder matter more than the machine.
